The main reason a barbecue smoker is a good investment is the taste. People around the country have differing opinions on beef versus pork or red sauce versus white sauce, but there is very little argument that the smoked flavor can not be touched by any other method of cooking. 1.) Indirect Cooking
Indirect cooking is different than grilling. In traditional grilling, the food is cooked directly over the heat source. This is a relatively quick process that works well with hamburgers, hot dogs and steaks. But it is not adequate for large cuts of meat. For racks of ribs, brisket and even whole hogs, indirect cooking is necessary so that the outside of the meat is not overdone while the inside gets tender and juicy.

Most people associate meats with barbecue smokers, but there are many other foods that are wonderful prepared this way. Most vegetables, many fruits and even desserts can be cooked on a barbecue smoker. If you buy a cook book for barbecue smokers, there will likely be sections for these foods. If not, there are a number of excellent recipes and barbecue smoker cook books available online.
3.) Variety of Options
There are three basic kinds of barbecue smokers, and all of them have their advantages. Charcoal is the most time consuming of the three, but the flavor is impossible to beat. Gas smokers are cleaner than charcoal and many people feel that they are easier to use. Electric smokers are the easiest, and they seal tightly, which keeps the moisture in for the most tenderness.
4.) Multi-Use Smokers
Most models of smokers have a box for direct grilling as well as a smoker box. This saves you money and space, allowing you to have only one unit for both jobs.
5.) Keep the Kitchen Clean
If the flavor and aroma of food cooked on a barbecue smoker is not enough to convince you that you need one, maybe keeping the kitchen clean is. Cooking on the stove and in the oven makes a mess all over the kitchen. With a barbecue smoker, you do not get the splatters and spills in the kitchen - they all stay outside. It is also keeps the kitchen and house much cooler in the summer, especially if you have a large group of people in the house.
